Job summary

The Wine Bar Prep Cook at Biltmore in Asheville, NC is a flexible, on-call Reserve position beginning at $17/hour. You’ll prepare foods, receive and rotate stock, and maintain sanitation to ServSafe standards.

The role emphasizes teamwork, accuracy, and timely service in a busy wine bar environment. You will support the department and leadership, ensure proper mise en place, and help maintain guest satisfaction through consistent quality and timely service.

Qualifications

• Previous experience with food preparation in a full-service restaurant strongly preferred.
• Basic math, knife handling, and food preparation skills.
• Knowledge of food sanitation procedures. ServSafe certification preferred.
• Ability to read and execute recipes.
• Able to work effectively with or without direct supervision.
• Strong time management and organizational skills.
• Ability to be proactive, exercise good judgment, and take initiative where needed.
• Demonstrated commitment to providing world class guest service and stellar experiences.

Responsibilities

• Maintain a clean working environment, where sanitation, health and safety standards are never compromised; maintain ServSafe Standards.
• Prepare food and ingredients for use in menu items and drink specials.
• Consistently keep the Wine Bar stocked with clean glasses, and clear of dirty glasses; washing and storing all dishes, glassware and silverware properly.
• Double check daily forecasts in order to prepare and set-up properly for each day.
• Accountable for proper rotation, storage and dating of all food items; check all food items daily for quality and freshness.
• Ensure all items are properly prepared, sliced/cut, garnished, and consistently presented to Biltmore's quality standards.
• Ensure all equipment is properly cleaned, maintained and in safe, good working order.
• Empty all garbage and clean cans when needed.
• Prepare and plan in advance to ensure everything needed for next shift is ready for the following day.
• Clean sink and pots area after every shift.
• Clean and organize all stations, coolers, and walk-ins for next shift.
• Required to maintain floor cleanliness through consistent mopping and sweeping of floors.
• Responsible for routine cleaning of dish machine.
• Work with the Winery Stockroom Team on receiving and storing items from delivery trucks, and ensuring proper storage and rotation of product.
