Qualifications

• Prior experience with portion cutting meat.

Responsibilities

• Accurately cut to trim and yield specifications as per cut tickets.
• Provide communication to supervisor about discrepancies between tickets and customer purchases.
• Pull raw materials and pre-cut inventory according to dates; report short shelf-life items.
• Label products and equipment to meet legal and safety regulations.
• Record data to produce cutting yield tests and maintain inventory levels.
• Maintain compliance with U.S.D.A. guidelines and safety programs.
• Assemble and disassemble equipment at shift start/end; keep knives and scales clean and stored.
• Support profitability through product yields and meeting readiness deadlines.
• Complete other duties as assigned.
