Qualifications

• Experience with portion cutting meat.
• Ability to perform mathematical calculations for portions.

Responsibilities

• Accurately cut to trim and yield specifications as provided by cut tickets.
• Communicate any discrepancies between tickets and customer purchases to supervisor.
• Pull raw materials and pre-cut inventory according to codes and report short shelf-life items.
• Label products and equipment per legal and safety regulations.
• Record data to produce cutting yield tests and monitor inventory levels.
• Maintain compliance with USDA guidelines; assemble/tear down equipment; clean and store tools.
• Support profitability by achieving yields and meeting deadlines for readiness.
• Follow safety programs and report unsafe conditions or accidents.
