Qualifications

• Experience in butcher/meat-cutting and seafood fabrication.
• Strong knife skills and knowledge of yields, portions, quality, and safe equipment use.
• Ability to work accurately in refrigerated/production environments and adhere to sanitation standards.

Responsibilities

• Break down, trim, cut, portion, grind, or prepare proteins to specification.
• Operate knives, saws, grinders, scales and other equipment safely.
• Monitor yields, trim waste, quality, labeling, storage and rotation.
