The Sushi Chef position brings skill, precision and personality to the counter, preparing and serving the omakase menu while helping set the pace of each seating. The ideal candidate remains composed under service and connects naturally with guests.

Qualifications

• 2+ years experience as sushi chef in omakase or fine dining
• Strong knife skills prepping nigiri, sashimi and hand rolls
• Knowledge of fish handling, storage and foodsafety
• Experience engaging guests at a counter
• Ability to pace seatings with precision
• Calm, engaging presence and guest connection

Responsibilities

• Prepare and serve nigiri, sashimi, hand rolls and items to spec
• Execute timed seatings with consistent quality and pacing
• Engage guests throughout the omakase experience
• Prepare, handle and store fish following foodsafety standards
• Maintain an organized workstation
• Monitor inventory and communicate supply needs
• Coordinate with chefs and front-of-house team
• Complete opening, closing and sanitation procedures
