Qualifications

• Ability to perform mathematical calculations and conversions to determine the amounts and sizes of products needed for orders.
• Ability to read, write and communicate in the English language.
• Prior experience with portion cutting meat.

Responsibilities

• Direct the short-term production flow and maintain organization in the production area.
• Cut meat accurately to trim and yield specifications as per cut tickets.
• Report discrepancies between tickets and customer orders to the supervisor.
• Label products and equipment to comply with safety and legal regulations.
• Record data for cutting yield tests and maintain inventory levels as directed.
• Ensure product specs are met and follow USDA guidelines.
