Qualifications

• Ability to perform mathematical calculations and conversions to determine the amounts and sizes of products needed for orders.
• Ability to read, write and communicate in the English language.
• Prior experience with portion cutting meat.

Responsibilities

• Direct the short-term flow and organization of the production area with the team.
• Cut meat accurately to trim and yield specifications per cut tickets.
• Report discrepancies between cutting tickets and customer purchases to the supervisor.
• Label products and equipment to meet legal and safety regulations.
• Record data to produce cutting yield tests and monitor accuracy.
• Count inventory levels and maintain supervisor-set levels.
• Ensure product specifications meet guidelines and USDA requirements.
• Assemble and tear down equipment at shift start/end.
• Clean, store, and maintain knives, scales, and tools.
• Support profitability by achieving yields and meeting deadlines.
• Perform other duties as assigned and participate in safety programs.
