Job summary

Riviera Dining Group seeks a skilled sushi cook to support exceptional dining experiences in a fast-paced luxury environment in Miami Beach. You will prepare sushi dishes with precision, handle rice preparation, and maintain high safety and presentation standards.

Requirements include at least 2 years of sushi experience, knife skills, knowledge of sushi-rolling techniques, and a Food Handler’s Permit. A sign-on bonus of $250 is offered after six months of continuous employment.

Qualifications

• 2+ years as a sushi cook or in a high-volume Asian restaurant.
• Strong knowledge of sushi types and knife skills.
• Ability to follow recipes and communicate clearly and effectively.

Responsibilities

• Prepare all types of sushi (maki, nigiri, sashimi) with precision.
• Prepare sushi rice to proper seasoning, texture, and presentation.
• Slice and fillet fish while maintaining quality.
• Customize orders for guest preferences and allergies.
• Follow prep lists and instructions from chefs.
• Work with speed and accuracy in a high-volume environment.
• Maintain proper use, care, and cleanliness of kitchen equipment.
• Comply with health regulations and company standards.
• Collaborate with the team and maintain punctuality.
• Maintain confidentiality of recipes and techniques.
