Four Seasons Residence Club Aviara in Carlsbad, CA is seeking a Cook 2 to execute diverse and flavorful menus with efficiency. You will oversee daily kitchen operations, assist in menu creation and cost controls, and maintain high quality in production and presentation.

The ideal candidate has 3+ years of fine dining experience, strong plating skills, and English proficiency. Benefits include an hourly rate of $25, 401(k), training, discounts, dry cleaning, and staff meals.

Qualificações

• English language proficiency in reading, writing and speaking.
• High school graduate with apprenticeship or culinary school education.
• Strong sense of taste and sauce preparation skills.
• Refined plating techniques.
• 3+ years culinary experience in fine dining.

Responsabilidades

• Oversee daily kitchen operations at the station and operate independently in a busy environment.
• Assist in menu creation, preparation of items and specials and cost recipes.
• Manage mise en place, pars, and station setup.
• Complete requisitions, obtain proper signatures and submit them to Purchasing.
• Communicate with the Summit Grill Manager, Sous Chef, and Chef de Cuisine regarding menu items, shortages or problems.
• Utilize the computer system for order retrieval.
• Maintain quality standards in production and presentation using standard recipes.
• Foster a positive working relationship with colleagues and reflect Four Seasons high standards.
• Ensure a clean and organized work area; store items properly at end of shift.
• Handle and report any accident immediately.
• Cover Cook I on days off or vacations.
• Perform other tasks or projects as assigned by Residence Club management.
