Fairmont Dallas seeks a dynamic Director of Food & Beverage to lead with vision, drive profitability, and elevate world‑class dining experiences. You will collaborate with the Executive Committee, forecast revenue, and develop leaders across F&B to ensure exceptional guest satisfaction.

The role requires strategic planning, budget management, and a passion for premium service within a luxury hotel environment in Dallas.

Qualifications

• Minimum 5 years’ Food & Beverage managerial experience in a luxury hotel.
• Professional appearance and grooming standards.
• Extensive knowledge of fine dining and banqueting operations.
• Excellent communication skills.
• Extensive Food and Wine background.
• Ability to train and develop leaders.
• Excellent budgeting and forecasting ability.
• Knowledge of expense management.
• Excellent people skills.
• Ability to work with a diverse staff.
• Ability to coordinate special events.

Responsibilities

• Consistently offer professional, friendly, and engaging service.
• Lead and manage the day‑to‑day operations of the Food & Beverage Division, ensuring all service standards are followed.
• Drive innovative promotions, menus and concepts, creating a destination of choice for both hotel and external guests.
• Lead and support all Food & Beverage departments in the achievement of their financial and operational targets.
• Prepare annual budgets and administer them in a fiscally responsible manner.
• Develop, implement and manage the department's business/marketing plan and budget; continually analyze, forecast, monitor and control the labor and food costs to meet or exceed objectives.
• Market the Food and Beverage outlets; develop and manage the implementation of menus, package deals, promotions, displays, decorations and presentations within corporate guidelines to capture more in‑house guests and a larger share of the local market to meet or exceed sales and financial goals and objectives.
• Assist in the preparation of the annual strategic plan and achieve the goals and targets therein.
• Ensure the implementation of standards in guest service and constantly seek out ways to improve product and service as well as increase volumes and profits.
• Respond to customer trends and concerns to ensure a quality experience and enhance future sales prospects.
• Oversee the selection, training and development of all F&B employees to ensure timely recruitment and career growth.
• Implement and manage all company programs to ensure compliance; follow department policies and procedures and service standards.
• Ensure compliance with health, safety, sanitation, and alcohol awareness standards and policies, while supervising regular audits.
