Job Overview

Ensure proper service from the front line through quality control, training of line cooks, and maintaining proper sanitation levels.

Responsibilities

  1. Check all items against recipe cards, verify use records, and ensure food presentation is efficient and of high quality.
  2. Monitor line setup before meal functions to maximize efficiency.
  3. Maintain equipment and enforce kitchen cleanliness policies.
  4. Prepare food following recipes, production, and portion standards, and coordinate with servers.
  5. Start food items prepared ahead of time, avoiding over-preparation.
  6. Label and rotate food containers per SOP, ensuring proper storage and temperatures.
  7. Check pars, determine preparations needed, and set up lines accordingly.
  8. Note out-of-stock items or shortages.
  9. Return unused food to storage, covering and dating perishables.
  10. Assist in managing food costs by controlling waste and usage per SOP.

Qualifications

Education/Formal Training

High school diploma or equivalent.

Experience

One to two years of related experience preferred.

Knowledge/Skills

  • Knowledge of cooking practices and kitchen procedures.

Physical Demands

The role involves lifting up to 70 lbs, periodic climbing, bending, full mobility, continuous standing, and the ability to hear timers and communicate effectively. Temperatures may vary from -10°F in the freezer to over 100°F on the front line. Reasonable accommodations can be made for individuals with disabilities.
