Job Overview

Ensure proper service from the front line through quality control, training of line cooks, and maintaining proper sanitation levels.

Responsibilities
  • Check all items against recipe cards; verify use records and ensure food is presented efficiently and with quality.
  • Monitor line setup before meal functions to ensure maximum efficiency.
  • Maintain equipment and enforce the kitchen 'clean as you go' policy.
  • Prepare food following recipes, standards, and server dupe, ensuring consistent quality.
  • Start pre-prepared food items, avoiding overproduction.
  • Label and rotate food containers per SOP, keeping perishables at proper temperatures.
  • Check pars, determine prep needs, freezer pulls, and line setup.
  • Identify out-of-stock items or shortages.
  • Assist in keeping the buffet stocked.
  • Return unused food to storage, covering and dating perishables.
  • Assist in plans to control food costs, waste, and usage per SOP.
Qualifications

Education/Formal Training

High school diploma or equivalent.

Experience

One to two years in a related position preferred.

Knowledge/Skills

  • Knowledge of cooking practices and kitchen procedures to perform analytical work.
Physical Demands

Must meet physical requirements, with accommodations available. Includes lifting up to 70 lbs, climbing, bending, mobility, standing, hearing timers, seeing product quality, and following instructions.

Environment

Mostly indoor work; freezer temperatures at -10°F; front-line temperatures over 100°F.
