Qualifications

• Minimum 2 years previous line cook experience in a restaurant kitchen; scratch kitchen preferred.
• Solid knowledge of food products and ability to apply culinary techniques.
• Ability to learn and maintain knowledge of the menu with attention to plating details.
• Ability to perform in a high volume kitchen environment.

Responsibilities

• Maintain food storage and handling procedures.
• Maintain food quality and nutritional standards.
• Perform technical culinary production, portion control, and service standards.
• Follow production schedule.
• Prepare meats/poultry/game/fish, vegetables, and fruits; washing, peeling, cutting and seeding.
• Weighing and measuring ingredients; cooking methods: steaming, sautéing, frying, baking, roasting, braising, boiling, poaching, broiling.
