Highgate Hotels in Lahaina, HI, seeks an experienced Cook to prepare all food items according to standardized recipes for the Restaurant, Room Service, Employee Cafeteria and Banquets. The role emphasizes high standards of taste, presentation, cleanliness, and cost control in a dynamic hotel kitchen.

You will maintain proper sanitation, work across stations as needed, and participate in meetings and trainings.

Qualifications

• Thorough knowledge of menus and preparation per hotel standards.
• Maintain cleanliness and organization of storage areas.
• Prepare and display buffet items promptly during service.
• Proficiency in cooking techniques: charbroiling, poaching, deep-frying, sautéing, braising, roasting.
• Recognize quality standards in fresh produce and proteins.
• Maintain safe handling, storage, and sanitation.
• Prepare food for Banquets as required.
• Work across Kitchen stations as needed.
• Follow Health Department and company food safety regulations.

• Maintain warm, friendly demeanor with guests and staff.
• Communicate effectively with all levels of staff and guests.
• Multitask and prioritize kitchen functions to meet deadlines.
• Ensure timely preparation for Restaurant and Room Service hours.
