Job summary

Highgate Hotels in Monterey, CA seeks a Cook responsible for preparing all food items per standardized recipes for Restaurants, Room Service, Employee Cafeteria and Banquets. Maintain cleanliness, safety, and cost/production balance in the kitchen while adhering to hotel standards and health regulations.

The role requires culinary experience, a High School diploma or equivalent, and the ability to work flexible hours including long shifts.

Qualifications

• High School diploma or equivalent.
• Culinary experience required.
• Flexible and long hours sometimes required.
• Ability to stand during entire shift.
• Ability to withstand temperature variations both hot and cold.
• Knowledge of menus and the preparation required, according to hotel standards.
• Proficiency in cooking techniques: charbroiling, poaching, deep-frying, sauté, braising, roasting and par-cooking.

Responsibilities

• Maintain cleanliness and organization of all storage areas.
• Complete necessary food and station preparation prior to the opening of the restaurant to ensure guests are served promptly.
• Prepare and display buffet food items according to hotel standards.
• Recognize quality standards in fresh vegetables, fish, dairy and meat products.
• Maintain sanitary environment with proper handling, storage and sanitation.
• Prepare food for Banquets as required, following Banquet Event Orders specifications.
• Prepare and service food for the Employee Cafeteria as directed by the Chef.
• Follow all Health Department and Company regulations in regards to food safety.
