San Manuel Band of Mission Indians is seeking a Sous Chef – F&B to lead day-to-day kitchen operations in a high-volume casino environment. You will supervise cooks and kitchen staff, drive menu forecasting, and ensure adherence to health and safety standards while upholding our culinary team’s culture and values.

You will collaborate with Food & Beverage management to optimize production, control costs, and train staff.

Formación

• Associate’s degree in Culinary, Food Service, Hospitality, Business Management or related field is required.
• Culinary degree from an accredited culinary institute is preferred.
• Minimum two (2) years’ experience in a large hotel or casino operation with high volume production, catering, multi-unit aspects and larger staff management is required.
• Management training and/or culinary education experience is preferred.
• Related, relevant, and/or direct experience may be considered in lieu of minimum educational requirements.

Responsabilidades

• Maintains recipes, flavor profiles, consistency, production timeframes, and ensures materials needed are available to the team.
• Monitors finances of kitchen operations including food and labor costs, inventory, and monthly closure with business partners.
• Ensures safe working conditions and compliance with Health Dept, Gaming, FDA, OSHA, and related codes; participates in inspections.
• Maintains cleanliness and organization of the workspace and adjacent areas.
• Schedules kitchen line staff within budgeted labor costs and approves vacation requests without staffing disruption.
• Performs other duties to support efficient operation of the department.
