Yaamava' Resort & Casino at San Manuel is seeking a Sous Chef - F&B to lead daily kitchen operations and support a specific venue. You will supervise cooks and kitchen staff, train teams, and help establish menu forecasts based on customer counts and holidays.

The role emphasizes health and safety, budget adherence and collaboration with culinary management to uphold our best-in-class culture and service standards.

Qualifications

• Associate degree in Culinary, Food Service, Hospitality or related field required.
• Culinary degree from an accredited institute preferred.
• Minimum two years in a large hotel or casino kitchen with high-volume production.
• Experience managing staff and budgets in a fast-paced environment.
• Related experience may substitute for formal education.

Responsabilités

• Oversee daily kitchen operations for designated venue, ensuring quality and consistency.
• Supervise, train and schedule cooks, stewards and kitchen staff within budget.
• Develop recipes, plating guides and menu cards; forecast based on demand and holidays.
• Maintain health, safety and sanitation standards per regulations and policies.
• Monitor food and labor costs; ensure accurate paperwork and monthly inventory.
• Collaborate with Food & Beverage management to support culinary goals.
