Sky River Casino in Elk Grove, CA seeks a Sous Chef to support the Executive Chef in menu execution, training, and hands-on kitchen leadership. You will assign tasks, monitor quality, manage costs, and foster the Sky River Spirit while maintaining high guest satisfaction.

You will supervise culinary staff, develop recipes and specs, ensure sanitation and stock control, and collaborate with Pub Manager on large parties. Strong leadership and organizational skills are essential.

Responsabilidades

• Evaluates current needs, past experiences, and forecasted business conditions to allocate resources for maximum financial returns and guest service levels.
• Monitors and evaluates food preparation to ensure quality and consistency according to specifications.
• Develops large party menus with cost requirements and feasibility for efficient preparation.
• Selects, schedules, directs, supervises, trains, and develops culinary staff.
• Creates and determines costs associated with menus and/or specials.
• Develops and maintains recipe cards and specifications to ensure quality, consistency, portion, and cost control.
• Ensures compliance with all department and company rules and regulations.
• Monitors kitchen sanitation, storage, and stock rotation.
