White Lodging is hiring a Full Time Lead Line Cook for Dean's Steakhouse inside the JW Marriott Charlotte in Charlotte, NC. The role is a kitchen leadership position designed for an experienced line cook ready to advance toward Sous Chef, mentoring staff and managing daily back-of-house operations in a fast-paced, upscale hotel kitchen.

Qualifications

• Senior line cook or lead cook with proven leadership experience.
• Proficiency in sautéing, broiling, frying, roasting and butchery.
• Ability to mentor junior kitchen staff and manage daily production.

Responsibilities

• Serve as Sous Chef in training and oversee BOH operations in the absence of the Sous Chef.
• Mentor Line Cooks, apprentices and stewards while ensuring timely food prep.
• Follow F&B procedures, health dept. regs and food safety guidelines.
• Assist in maintaining food and labor cost targets.
• Ensure ingredient freshness and adherence to recipes and portions.
• Monitor guest feedback and uphold service and food quality standards.
