CHEF DE PARTIE 1 (Lead Line Cook)

JOB DESCRIPTION

Department: Early Mountain Culinary

Reports to: Executive Chef & Chef de Cuisine or their designated representatives

Compensation: $21.00 - $24.00 / hr.

The Chef de Partie I (CDP I) or Cook I role is responsible for the daily preparation and execution of service at their designated station. This position operates under the guidance of the Executive Chef or their designee, following all assigned procedures and tasks provided. Success in this role requires a solid grasp of timelines, ingredient requirements, flavor profiles, and the standards for each dish as directed during prep and service. A CDP I should possess strong fundamental culinary skills, ability to work independently, and efficiently. This role requires the potential to help lead other team members with a calm, focused, and structured approach. This is an advanced level role within the Early Mountain kitchen team, ideal for individuals with a good understanding of ingredients and basic kitchen operating procedures; eager to develop their skills and advance in a professional kitchen setting.

Essential Functions

  1. Perform preparation of daily mise en place, execute cooking of Meat Station / Hot Line for service in an efficient and timely manner.
  2. Maintain cleanliness and adhere to sanitation protocols as instructed by culinary leadership.
  3. Assist with tasks or projects assigned by Executive Chef or their designee, particularly those related to the a la carte & prix fixe menu’s.
  4. Conduct routine checks of the station and ingredients to ensure quality standards are consistently met.

Qualifications

Required:

  • Strong proficiency in knife skills and cooking techniques, such as sautéing, grilling, and frying.
  • Ability to follow recipes, control portions, and maintain consistency.
  • Knowledge in managing station inventory and ordering as needed.
  • Understanding of flavor development and the ability to assess the quality of prep work.
  • Strong communication skills and a collaborative approach to working within a team.

Preferred:

  • 2-3 years of professional kitchen experience, ideally in upscale or fine dining.
  • An associate degree in culinary arts or equivalent formal culinary training.

Skills & Physical Requirements:

  • Ability to work efficiently and maintain a clean workspace throughout the shift, ensuring all prep and service deadlines are met.
  • Problem-solving skills with the ability to adapt quickly during service challenges.
  • A passion for continuous learning and mentorship, fostering a culture of knowledge-sharing among colleagues.
  • Capability to lift up to 50 pounds.
  • Ability to stand for extended periods in a fast-paced kitchen environment.
