Job summary

Fairmont New Orleans’ Delmonico Steakhouse is seeking a Captain Server to deliver polished, knowledgeable, and personalized service while leading by example on the dining floor. You will oversee assigned sections, mentor Servers and Front of House colleagues, coordinate service flow with culinary teams, and uphold the Delmonico standards for wine, beef, temperatures, and guest care throughout service.

This role requires strong fine-dining experience, exceptional communication, VIP guest

Qualifications

• Minimum three years of Server experience in upscale, fine-dining or luxury hotel environment.
• Previous experience in a lead server or captain role preferred.
• Luxury hotel, fine-dining, or premium steakhouse experience preferred.

Responsibilities

• Lead by example in delivering warm, polished, professional service.
• Serve as a floor-level leader and resource for Front of House colleagues.
• Support management in maintaining service standards and guest experiences.
• Oversee assigned dining areas and ensure steps of service are executed consistently.
• Coordinate timing and flow of service between Front of House and Culinary teams.
• Maintain communication with Chef, Managers, and staff to ensure smooth service.
• Assist Servers with challenging service situations and VIP experiences.
• Assist with pre-shift briefings, menu presentations, and service meetings.
• Maintain knowledge of Delmonico Steakhouse menu and wine pairings.
• Ensure proper pacing, clearing, and presentation of tables per standards.
