Job summary

Modern Catering invites a seasoned Head Chef to lead kitchen production for a 100-person remote mining camp in Northern Washington. You will plan and execute high-calorie, nutritionally balanced menus (4,000+ calories/day), supervise cooks and prep staff, maintain food quality and safety, and manage portion control in a fast-paced, high-volume setting.

You will oversee inventory, storage, and temperature control, while collaborating with camp leadership to optimize operations during 14/14

Qualifications

• Proven experience in high-volume cooking or institutional food service.
• Strong leadership and ability to direct kitchen staff.
• Excellent organizational and multitasking skills under pressure.
• Current Food Worker Card and ServSafe Manager certification, or ability to obtain within 30 days.
• Knowledge of food safety, sanitation and workplace safety practices.
• Ability to thrive in a remote, rotational (14/14) work environment.

Responsibilities

• Lead daily kitchen operations and meal production for 100 workers.
• Plan high-calorie, nutritious menus for physically demanding work.
• Supervise and train cooks and prep staff; enforce standards.
• Maintain food safety, hygiene, sanitation and temperature controls.
