Modern Catering invites a seasoned Head Chef to lead kitchen production for a 100-person remote mining camp in Northern Washington. You will plan and execute high-calorie, nutritionally balanced menus (4,000+ calories/day), supervise cooks and prep staff, maintain food quality and safety, and manage portion control in a fast-paced, high-volume setting.

You will oversee inventory, storage, and temperature control, while collaborating with camp leadership to optimize operations during 14/14

Qualifications

• Proven experience in high-volume cooking or institutional food service.
• Strong leadership and ability to direct kitchen staff.
• Excellent organizational and multitasking skills under pressure.
• Current Food Worker Card and ServSafe Manager certification, or ability to obtain within 30 days.
• Knowledge of food safety, sanitation and workplace safety practices.
• Ability to thrive in a remote, rotational (14/14) work environment.

About the Role

We’re looking for a seasoned Head Chef / Lead Cook to lead kitchen production for our 100-person remote mining camp in Northern Washington. You’ll be responsible for planning and executing high-calorie, nutritionally balanced menus (4,000+ calories/day), supervising cooks and prep staff, maintaining food quality and safety, overseeing portion control and minimizing waste — all in a fast-paced, high-volume environment.

Key Responsibilities

• Lead daily kitchen operations and meal production for 100 workers, ensuring consistency, quality, and timeliness.
• Plan and execute high-calorie, satisfying menus suitable for physically demanding work schedules.
• Supervise, train, and support kitchen cooks and prep staff; enforce kitchen standards and procedures.
• Maintain strict compliance with food safety, hygiene, and sanitation standards.
• Manage inventory, portion control, waste reduction, and ordering of food supplies and ingredients.
• Ensure proper storage, food rotation, and temperature control.
• Work collaboratively with camp leadership to optimize kitchen operations.

Required Qualifications

• Proven experience in high-volume cooking, institutional food service, or similar culinary environment.
• Strong leadership and team management skills; capable of directing kitchen staff effectively.
• Excellent organizational and multitasking skills under pressure.
