Job summary

Caffè Ducali seeks an experienced Baker for our Winchester location. This hands-on role covers breads, pastries, desserts, fresh pasta and Roman-style pizza while supporting bakery and dough production for the restaurant group.

The ideal candidate thrives in a fast-paced, high-volume setting, demonstrates craftsmanship, and can lead bakery production with consistency and quality across all products. Training junior staff, inventory management and food safety are part of the role.

Qualifications

• Proven professional baking experience.
• Strong bread, dough and pastry production skills.
• Experience with fresh pasta and Roman-style pizza preferred.
• Knowledge of dough fermentation and temperature control.
• Ability to lead a production team in a high-volume environment.

Responsibilities

• Prepare breads, pastries, desserts and other baked goods using established recipes and production standards.
• Lead daily bakery production, ensuring proper quantities, quality and consistency across all products.
• Produce and manage fresh pasta, including mixing, kneading, rolling or extruding, shaping, portioning and proper storage.
• Prepare Roman-style pizza, including dough mixing, fermentation, portioning, shaping, baking and finishing.
• Produce dough for other restaurants within the group as needed.
• Develop an understanding of dough fermentation, hydration, temperature and handling.
• Oversee bakery production staff and maintain an organized, efficient daily production schedule.
• Maintain accurate production levels and adjust quantities based on sales and events.
• Monitor inventory, ordering and product waste.
• Maintain a clean, organized bakery workspace with food-safety in mind.
• Follow food-safety, sanitation and workplace procedures.
• Assist with training and developing other bakery and kitchen team members.
• Work collaboratively with culinary teams to maintain consistent standards.
