Job summary

Viejas Casino & Resort is seeking a Kitchen Utility Lead to assist the Executive Steward in directing kitchen utilities and training team members. You will help maintain sanitary kitchens, supervise tasks, and ensure compliance with health regulations and HACCP standards.

The role involves supporting chefs, coordinating shift work, and maintaining clean, organized workspaces while adapting to changing schedules. A Food Handler’s Certificate and a flexible schedule are required.

Qualifications

• Must have high school diploma or equivalent.
• Food Handler’s Certificate is required.
• 2 to 5 years of experience and/or training.
• Bilingual in Spanish or Tagalog preferred but not required.

Responsibilities

• Assist the Executive Steward with training team members on policies and procedures.
• Maintain and stock kitchens at start/end of shifts.
• Ensure compliance with HACCP, hygiene, and sanitation standards.
• Lead shift teams occasionally and support supervisors as needed.
• Ensure items are organized, floors and surfaces are clean, and safety rules are followed.
