Job summary

PENN Entertainment is seeking a kitchen supervisor to manage food preparation and lead a team in a fast-paced setting. You will oversee cooks, plan menus, and ensure portions and garnishes meet standards.

The role requires keeping up with safety, sanitation, and licensing requirements (WV racing license, Food Handler, TIPS). You’ll train and supervise 10–20 staff, handling hiring and performance reviews as needed.

Qualifications

• Associate's degree or equivalent from a two-year college; or six months to one year related experience.
• Ability to read and interpret safety rules, operating and maintenance instructions, and procedures.
• Ability to calculate figures such as discounts and volumes for costs and portions.
• Must qualify for licensing with the West Virginia Racing Commission and obtain Food Handler Certification.
• Regularly stand, walk, lift up to 50 pounds, and work in a loud environment.

Responsibilities

• Follow food and beverage policies and provide ACES Guest Service.
• Assist with updating recipes and costs of goods sold.
• Give instructions to cooking personnel in fine points of cooking.
• Order, stock and inventory food products.
• Cook and carve meats, and prepare sauces during rush periods and events.
• Adhere to safety and sanitation regulations.
• In the absence of Room Chef and Executive Chef, supervise kitchen operations.
• Maintain required licenses and certifications (WV racing, food handler, TIPS).
• Directly supervise 10 to 20 employees and carry out HR duties per policy.
• Interview, hire, train, and evaluate staff; assign and supervise work; address issues.
