Ideal candidates have 2+ years of line cook experience in a high-volume setting, strong knife skills, and the ability to stay composed under pressure while maintaining food quality and cleanliness.

Qualifications

• 2+ years of line cook experience in an upscale, high-volume restaurant environment (Japanese/izakaya experience is a strong plus).
• Proficient knife skills, station management, and familiarity with high-heat cooking tools.
• Strong team mentality, stamina, and ability to stay calm under intense pressure.

Responsibilities

• Pacing & Ticket Execution: Maintain rapid ticket times and clear communication with the expo and sushi bar during peak service hours.
• Station Setup: Ensure stations are fully stocked, prepped, and organized prior to each service shift.
• Kitchen Safety & Cleanliness: Strictly follow food handling, labeling, rotation (FIFO), and sanitation procedures.
