A Cook is responsible for preparing all food items based on standardized recipes for the Cafe, Room Service, Employee Cafeteria, and Banquets, while maintaining high standards to produce appealing and appetizing dishes. The role also includes ensuring cleanliness, sanitation, and safety in the kitchen and work areas, minimizing waste, and maximizing cost efficiency. The Prep Cook specifically prepares cold foods and shellfish, slices meat, and brews coffee or tea.
Qualifications:
- High School diploma or equivalent and/or experience in a hotel or related field preferred.
- Food Handlers Certification (must meet State requirements).
- Ability to convey information clearly.
- Ability to evaluate and choose among alternative actions quickly and accurately.
- Ability to work well under stress and in high-pressure situations.
- Maintain composure and objectivity under pressure.
Responsibilities:
- Approach all guest and associate interactions in a friendly, service-oriented manner.
- Maintain regular attendance as per Aimbridge Hospitality standards and hotel needs.
- Maintain high standards of personal appearance and grooming, including proper uniform and name tag.
- Comply with all Aimbridge Hospitality standards, regulations, and safety procedures.
- Meet certification requirements such as Food Handlers and Safety certifications.
- Have thorough knowledge of menus and preparation standards.
- Maintain cleanliness and organization of storage areas.
- Prepare and display buffet foods according to standards.
- Prepare foods for banquets following Banquet Event Orders.
- Prepare and serve food for the Employee Cafeteria as directed.
- Follow standard recipes and preparation guidelines, with specials under supervision.
- Break down buffets and kitchen lines, storing food and equipment properly after meals.
- Work banquet food stations as scheduled.
- Know the location and operation of fire extinguishing equipment.
- Practice safe work habits to prevent injuries.
- Familiarize with hotel policies, house rules, and emergency procedures.
- Use Production Charts as per standards.
- Be attentive, friendly, helpful, and courteous to guests and colleagues.
- Operate and maintain cleanliness of kitchen equipment.
- Follow 'Clean As You Go' policy.
- Assist with food storage and rotation.
- Sign keys in and out as needed under supervision.
- Attend required meetings and perform other duties as assigned.
- Ensure proper storage of food to prevent spoilage.
- Interact with guests and colleagues appropriately.
- Access and control sensitive areas responsibly.
- Maintain high trust and responsibility levels.
- Represent the company professionally and exercise sound judgment.
