Job summary

Osage Casinos in Ponca City, OK seeks a motivated cook to support the Sous Chef in a fast-paced kitchen. You will prepare hot and cold items, assist with prep, and ensure compliance with safety policies and recipes.

Follow portion controls, maintain stock, monitor waste, and collaborate with a team to deliver quality dishes for guests while upholding Osage standards and guest service. Evening and weekend shifts may be required; strong time management and attention to detail are essential.

Qualifications

• Must be at least 18 years old.
• Two years of line or prep cook experience in high-volume restaurant.
• Understand general culinary knowledge.
• Pass pre-employment drug screening and obtain gaming license from Osage Nation.
• Eligible to work in the United States.
• Osage, Native American, and Veteran preference applies to all positions at Osage Casinos.
• Able to perform all essential functions of job duties with or without reasonable accommodation.

Responsibilities

• Prepares food items for service with kitchen staff as directed, in a sanitary and timely manner.
• Follows recipes, controls portions and presentation specifications.
• Monitor food waste and prep levels.
• Maintain stocking levels for pantry, line and prep areas.
• Maintain rotation of items following FIFO methods.
• Monitor ticket times as dictated by courses and Chef’s.
• Adjusts thermostat controls to regulate oven temperatures.
• Prepare foods by frying, baking, broiling, sauté, steam and other methods.
• Plate presentation with gravies and sauces, and garnishes to fill orders.
• Contributes to a team effort and performs related duties as assigned.
• Provide excellent guest service and uphold safety and sanitation standards.
