Job summary

The Peninsula Chicago is seeking a guest-focused Head of Mixology to lead our beverage program across a luxury, five-star property on Michigan Avenue. You will design innovative cocktails, wine and non-alcoholic offerings, while mentoring bartenders and ensuring top-tier service and compliance with health and safety standards.

We value expertise in beverage operations, menu development, and guest engagement.

Qualifications

Minimum of 2 years leadership experience in a three-meal period in a restaurant Five-Star hotel.
In-depth understanding of cuisine, wines and pairings.
Relevant professional qualifications (Hospitality, Business, Marketing).
Ability to speak English fluently; additional languages advantageous.

Responsibilities

Design, develop, and implement innovative cocktail, spirits, wine, and non-alcoholic beverage programs.
Create seasonal and signature beverage menus aligned with The Peninsula and guest expectations.
Standardize recipes, presentation guidelines, and quality controls across all departments.
Lead, mentor, and develop bartenders, bar managers, and beverage teams.
Ensure compliance with all alcohol service regulations, licensing requirements, and health and safety standards.
Assist Z Bar in staff scheduling, delegation of tasks, monitoring service and reservations, and floor presence.
Utilize POS and HOTsos systems according to policy.
