Job summary

DeMarco's Italian is seeking a Sous Chef with proven leadership to manage back-of-house operations and support execution of our pasta-driven Italian menu. The ideal candidate has hands-on experience producing handmade pasta and sauces from scratch.

You will oversee food prep, cooking, inventory management, and supervise a kitchen team while upholding high standards of quality, sanitation, and food safety. Early shifts, weekends, and holidays required.

Qualifications

• Proven experience as a Sous Chef or senior kitchen leader in a full-service Italian restaurant.
• Hands-on experience making handmade pasta and sauces from scratch.
• Strong knowledge of pasta dough, hydration, resting, rolling, shaping, filling, cutting, cooking and storage.
• Ability to train and supervise kitchen staff to maintain consistency across the team.
• Excellent communication and organizational skills, with ability to coordinate FOH and BOH.

Responsibilities

• Oversee daily BOH operations including prep, cooking, service and cleanup.
• Lead production of handmade pasta and sauces from scratch.
• Train and develop kitchen staff in pasta making, sauce production, cooking, plating and recipe execution.
• Maintain high standards of quality, presentation, sanitation and food safety.
• Monitor food costs, portions, waste, and labor to support cost-effective operations.
