About Ditka's Restaurant Group

Founded in 1997, Ditka's Restaurant Group is a collection of four distinct restaurant concepts across five locations in Illinois, Pennsylvania, and North Carolina. Our scratch kitchens emphasize quality ingredients, culinary craftsmanship, and food prepared with care. Each concept brings its own personality to a shared commitment to exceptional dining experiences and becoming our guests’ favorite place to eat.

Our Foundation

Our culture is grounded in genuine hospitality, respect for people, and pride in our work. We believe exceptional restaurants succeed through teamwork, consistent execution, and leaders who teach, coach, and develop others. We create an environment where team members feel valued and supported, and where quality, integrity, and accountability guide every shift.

Position Summary

We are seeking an experienced, motivated General Manager to lead restaurant operations, deliver memorable guest experiences, and drive sales and profitability. This hands‑on leader develops managers and Team Members, builds a positive and productive team culture, and maintains high standards of food, beverage, service, cleanliness, and safety.

The ideal candidate brings General Manager experience in high-volume, supreme‑casual or fine‑dining restaurants, a passion for hospitality, and the ability to balance team leadership, guest satisfaction, and business priorities.

What You'll Do
  • Lead daily restaurant operations, maintaining high standards of food, beverage, service, and hospitality.
  • Model Our Foundation, communicate company direction, and set clear expectations through leadership by example.
  • Recruit, train, coach, and develop managers and Team Members; manage performance, corrective action, and separations in partnership with People Operations.
  • Build a respectful, inclusive, harassment‑free workplace that supports teamwork and retention.
  • Take full profit and loss (P&L) accountability, driving sales and managing labor, product costs, and operating expenses.
  • Oversee management and Team Member schedules to support peak service periods, meet labor budgets, and minimize unnecessary overtime.
  • Partner with the Executive Chef to ensure consistent food quality, service timing, and coordination between front and back of house.
  • Build guest loyalty through exceptional dining experiences and prompt, thoughtful service recovery.
  • Oversee purchasing, inventory, receiving, and storage to maintain product quality, availability, and cost controls.
  • Ensure accurate, timely payroll information, employment records, and Team Member status changes.
  • Uphold company policies and applicable laws while maintaining food safety, sanitation, responsible alcohol service, security, and workplace safety standards.
  • Maintain restaurant cleanliness, Team Member appearance standards, and the condition of facilities and equipment.
What We're Looking For
  • At least 5 years of progressive restaurant experience, including supervisory responsibility and prior General Manager experience in a high-volume, supreme‑casual or fine‑dining restaurant.
  • Proven ability to develop leaders, build strong teams, and deliver consistent guest experiences while achieving sales and profit goals.
  • Strong knowledge of restaurant financials, budgeting, labor management, inventory, purchasing, and food and beverage operations.
  • Clear communication, sound judgment, strong organization, and the ability to manage competing priorities calmly during busy service.
  • Some college or advanced training in food and beverage management, or an equivalent combination of education and relevant experience.
  • Current Food Protection Manager certification; allergen training or certification and responsible alcohol‑service training appropriate to North Carolina and company standards.
Benefits and Perks
  • Performance‑based bonuses paid quarterly up to 12.5% of base salary
  • Paid vacation escalating based on tenure
  • Medical and dental insurance; Company pays 60% of premiums
  • Company‑paid life insurance policy of $30,000
  • Opportunities to grow professionally, develop future leaders, and make a meaningful impact on the restaurant and its team
Work Environment
  • On‑site leadership at Catalina Kitchen + Bar in Charlotte, with availability for evenings, weekends, and holidays based on restaurant needs.
  • Active work throughout dining rooms, bar, kitchen, and storage areas, including extended standing and walking during shifts of 10 hours, bending, reaching, and able to pull, carry, and lift objects that may be heavy.
  • Work in a fast‑paced environment with exposure to heat, refrigeration, noise, and wet surfaces. Essential duties must be performed with or without reasonable accommodation.
