Job summary

America's Heartland Packing is hiring a 1st legger to remove hide from the lower round, hock and leg of the carcass on a harvesting line. You will begin at the pattern mark, insert the knife between hide and carcass, and skin the hide from the hind leg area.

Responsibilities include precise knife work, maintaining clean technique, and adhering to sanitation protocols, with potential to perform related duties as needed in a fast-paced plant environment.

Qualifications

• Be attentive to detail.
• Ability to work safely, wear PPE, and follow instructions.
• Ability to attend work consistently.

Responsibilities

• Use knife to cut pattern from midline of hind hock to rump on first leg.
• With clean hand, hold hide tight while performing job.
• Use knife to skin inside of hind leg, cut from inside of hide out.
• If knife cuts through hide or pattern, sanitation dip required.
• Steel knife and then place knife into sterilizer after each carcass.
• Note: other related duties may be performed as needed.
