Job summary

America's Heartland Packing in Wright City, MO is seeking a 1st legger to remove hide from the lower round, hock and leg using a knife, skinning and sanitation protocols on a fast-paced harvest floor.

The role requires attentiveness to detail, PPE compliance, ability to stand for long periods, and a strong work ethic; prior beef plant or manufacturing experience is a plus. Equal opportunity employer.

Qualifications

• Be attentive to detail.

• Follow all safety, food safety, and sanitary dress procedures.
• Able to stand for lengthy periods of time.

Responsibilities

• Use knife to cut pattern from midline of hind hock to rump on first leg.
• With clean hand, hold hide with hand to hold the hide tight while performing job.
• Use knife to skin inside of hind leg, cut from inside of hide out.
• If the knife cuts through the hide or comes out of the pattern a sanitation dip of the knife is required.
• Steel knife and then place knife into sterilizer after each carcass.
