Job summary

Oak View Group (OVG) is seeking a dedicated Sushi Chef to support the fine-dining sushi program at Allegiant Stadium in Las Vegas. You will execute traditional and contemporary sushi, mentor junior team members, and maintain high culinary and sanitary standards.

The role pays an hourly rate of $40.00 and requires attendance at events, including nights and weekends. SNHD Food Handler Card is required.

Qualifications

• 2-3+ years of professional sushi experience in upscale or fine-dining.
• Mastery of sushi techniques including nigiri, maki, sashimi, and basic kitchen support.
• Understanding of fish breakdown, rice prep, knife handling, and Japanese ingredients.
• High attention to detail and commitment to presentation.
• Familiarity with omakase or chef’s counter service preferred.
• Knowledge of Japanese culinary terms, seasonal fish, and basic sake pairing.
• Ability to work a flexible schedule including nights, weekends, and holidays as needed.
• Required to possess or obtain a valid Southern Nevada Health District (SNHD) Food Handler Safety Card.
• Thorough working knowledge of sanitation requirements and food safety policies for venue operations.

Responsibilities

• Prepare and present high-end sushi and sashimi with precision and consistency.
• Support the Executive Sushi Chef in daily operation of the sushi station.
• Assist in sourcing and quality-checking seafood, rice, and ingredients for freshness.
• Monitor prep and production schedules to ensure timely service (omakase and a la carte).
• Uphold cleanliness, knife safety, and HACCP-compliant sanitation.
• Collaborate on menu specials, seasonal updates, and plating innovations.
• Maintain equipment, sharpen knives, and keep the station clean and organized.
• Participate in pre-service meetings and tastings.
