Rosa Mexicano Restaurants, a NYC-based successful casual fine dining restaurant group known for outstanding hospitality and service, and offering an authentic menu recognized by the Zagat Survey as "the 'gold standard' of 'upscale modern' Mexican cuisine," with locations across New York, New Jersey, Massachusetts, Connecticut, Pennsylvania, Virginia, and Maryland, seeks an Executive Sous Chef for our Lincoln Center location in the Empire Hotel.

As an Executive Sous Chef with Rosa Mexicano, you will lead the culinary team in all areas of the unit, ensuring on-trend, efficient, safe, and sanitary food production. Your responsibilities include inventory management, purchasing, food cost controls, staff management, and development. You will also provide excellent customer service to a diverse clientele and uphold the highest standards of food quality and sanitation.

Key Responsibilities
  • Evaluate food products to ensure quality standards are consistently met.
  • Organize and coordinate the work of chefs, cooks, and kitchen staff to ensure food preparation, delivery, setup, and serving meet safety and customer expectations.
  • Maintain effective communication with employees to improve service quality and resolve issues.
  • Analyze performance trends and implement improvements.
  • Follow standardized recipes, portioning, and presentation standards; complete daily production worksheets and waste logs; taste meals for quality assurance.
  • Train kitchen staff in food preparation, safety, equipment operation, and sanitation per company and regulatory standards.
  • Establish and maintain cleaning and maintenance schedules for equipment and work areas.
  • Manage inventory of supplies within guidelines, ensuring necessary stock is available.
  • Decide on the utilization of leftover food products within company guidelines.
  • Comply with health and sanitation regulations, evidenced by audits.
  • Participate in departmental meetings, staff development, and professional programs.
Preferred Qualifications
  • Culinary degree preferred.
  • Bachelor's Degree in Food Services Technology/Management or related field preferred.
  • Three to five years of progressive culinary or kitchen management experience.
  • Experience in planning and managing catering events.
  • Strong leadership skills and industry enthusiasm.
  • Knowledge of current food and catering trends, sanitation, food costs, and presentation.
  • Proficient in computer skills (Microsoft Office, Email, Internet).
  • Excellent communication skills across management, staff, and customers.
  • Flexible schedule including days, evenings, and weekends.
  • ServSafe Certification.
