The Noble 33 Hospitality and Lifestyle company is seeking an Executive Sous Chef for Meduza Mediterrania at our NEW YORK CITY location—this is a new concept and new opening. This position is responsible for ensuring the overall food quality, controlling COGS, training and supervising all back-of-house staff, and maintaining company standards. The role may also involve managing seasonal specials and menu updates.

Job Purpose:

Under the guidance of the Executive Chef and/or Chef de Cuisine, the Executive Sous Chef oversees back-of-house operations and shifts, leads the kitchen team, manages preparations, presentation, and quality of food, and collaborates with the General Manager to ensure smooth service and inventory management. The role requires versatility in performing all kitchen positions and may include staff hiring and training.

Duties & Functions:
  1. Conduct opening procedures, including receiving products, checking invoices, and recording temperatures.
  2. Understand the restaurant's operational setup and principles.
  3. Oversee and collaborate with the Sous Chef to uphold culinary standards.
  4. Manage labor schedules, oversee breaks, and assist with staffing needs.
  5. Assist with budgeting, inventory, and order management.
  6. Enforce hygiene and safety protocols, including FIFO, labeling, and temperature logs.
  7. Assist with order scheduling, menu adjustments, and supply chain troubleshooting.
  8. Ensure proper food prep, quality control, and recipe adherence.
  9. Train new hires and be flexible to cover various stations.
  10. Expedite orders during service to maintain quality and communication.
  11. Conduct closing procedures, including equipment breakdown and employee checkouts.
  12. Implement and educate team on new menu rollouts.
  13. Maintain safety standards and report incidents or hazards.
  14. Prepare ingredients and stations for scheduled events.
  15. Use resources efficiently and maintain hygiene standards.
  16. Conduct inventory and place orders as needed.
Specific Job Knowledge & Skills:
  • Culinary degree preferred; High School diploma or equivalent required.
  • 1-2 years management experience, preferably in upscale or lifestyle brands.
  • Ability to perform under pressure and coach precise plating.
  • Passion for food and guest experience.
  • Friendly demeanor, multitasking ability, attention to detail.
  • Strong communication skills; bilingual English/Spanish preferred.
  • Team-oriented and independent work capabilities.
  • Availability for flexible shifts, including holidays.
  • Basic computer skills; knowledge of health and safety regulations; current Manager Food Handlers card.
Physical Abilities:
  • Lift and move objects up to 50 pounds, perform repetitive motions, and work extended hours standing or walking.
