Job Description: Executive Sous Chef at COQODAQ

A new concept from Michelin-starred COTE Korean Steakhouse, unveiling its highly anticipated opening: COQODAQ, our new fried chicken concept, located two blocks from our COTE NYC location.

Role Overview

The Executive Sous Chef assists the Chef de Cuisine (“CDC”) and Executive Chef in leading all BOH team members, managing kitchen operations, menu planning, recipes, financial responsibilities, inventory, food quality, and employee supervision. They provide leadership and hands-on training, ensuring safety, sanitation, and a positive work environment.

Essential Job Duties & Responsibilities
Culinary
  • Develop and implement operating standards under the CDC's guidance.
  • Oversee ingredient stocking, ordering, and purchasing, ensuring freshness and minimizing waste.
  • Manage kitchen operations, ensuring food safety, efficiency, and adherence to specifications.
  • Establish and conduct line checks for DOH compliance multiple times daily.
  • Modify menus based on trends, costs, and seasonal availability; develop special items for holidays and events.
  • Lead weekly chef meetings, fostering creativity and seamless service, while maintaining vendor relationships.
Hospitality
  • Promote COQODAQ’s core values and culture.
  • Lead service, actively participating in kitchen stations during service.
  • Build positive customer relationships and address service needs collaboratively with the CDC and General Manager.
Finance
  • Maximize profitability through cost controls and budget monitoring.
  • Regularly cost recipes and oversee purchasing strategies.
  • Implement waste tracking and manage vendor relationships to ensure cost efficiency.
  • Ensure accurate inventory and financial reporting, and manage team member coverage while maintaining labor costs.
Operations
  • Maintain impeccable cleanliness in all kitchen areas.
  • Oversee daily administrative tasks, including payroll and station assignments.
  • Ensure proper dress and grooming standards.
  • Manage daily responsibilities of hourly staff, creating schedules within budget.
  • Implement systems of accountability, provide feedback, and conduct safety and service training.
  • Ensure compliance with health regulations, safety practices, and product standards.
  • Participate in community events and support corporate social responsibility goals.
Compensation and Benefits

NY State’s Pay Transparency Law requires including salary ranges:

  • Range: $80,000 – $85,000 USD
