Qualifications

• A.S. or equivalent experience.
• 5+ years of progressive culinary/kitchen management experience.
• High volume, complex foodservice operations experience.
• Institutional and batch cooking experience.
• Hands-on chef experience a must.
• Knowledge of food trends, production, sanitation and cost controls.
• Proficient with computers, including Word, Excel, PowerPoint, Outlook and Internet.
• Willing to participate in client satisfaction programs.

Responsibilities

• Plans regular and modified menus according to established guidelines.
• Follows standardized recipes, portioning and presentation standards; uses production worksheets and waste logs.
• Trains kitchen staff in food preparation, safety, and equipment operation per standards.
• Establishes cleaning and maintenance schedules for equipment and areas and enforces adherence.
• Maintains inventory of food and supplies within guidelines and ensures availability.
• Decides on utilization of leftovers within company guidelines.
• Complies with health, sanitation, and safety regulations; participates in audits.
• Follows safety policies and participates in departmental meetings and programs.
