Job summary

Morrison Living, a member of Compass Group USA, is seeking an Executive Chef to oversee kitchen operations for a 375-resident independent living facility. You will direct meal preparation in line with corporate programs and ensure a safe, sanitary work environment for staff.

Qualified candidates have 3–5 years of kitchen management, hands-on cooking skills, and strong knowledge of food cost controls, sanitation, and presentation.

Qualifications

• A.S. or equivalent experience.
• Minimum of 3–5 years progressive culinary/kitchen management experience.
• High-volume, complex foodservice operations experience desirable.
• Institutional and batch cooking experience.
• Hands-on chef experience required.
• Knowledge of food, catering trends, quality, sanitation and presentation.
• Proficient with computers including Word, Excel, PowerPoint, Outlook and Internet.
• ServSafe certification desirable.

Responsibilities

• Plans regular and modified menus according to guidelines.
• Follows standardized recipes, portioning and presentation standards; uses production worksheets and waste logs.
• Trains kitchen staff in food preparation, safety and sanitation.
• Maintains cleaning and maintenance schedules for equipment and work areas.
• Maintains inventory within guidelines and ensures product availability.
• Manages leftover food utilization within company guidelines.
• Ensures compliance with health and sanitation regulations and audits.
• Follows safety policies and participates in meetings and development programs.
