Job summary

Chartwells Higher Education, part of Compass Group USA, is seeking an Executive Chef at the University of Chicago. You will lead culinary operations, oversee menu development including Gluten Free, Kosher, Halal, Vegan, and Vegetarian options, and manage budgeting, food costing, and staff training.

Relocation assistance is available; this is a leadership role in a high-volume foodservice environment with opportunities to advance professionally and impact campus dining.

Qualifications

• AS degree or equivalent experience required.
• Five+ years of progressive high-volume culinary or kitchen management experience.
• Experience in high-volume, hands-on foodservice operations.
• Must be experienced with computers.

Responsibilities

• Plan regular and modified menus according to guidelines and standardized recipes.
• Complete and implement daily production worksheets and waste logs.
• Supervise and mentor chefs, cooks, and team on food prep, safety, and sanitation.
• Ensure culinary standards, recipe compliance and food quality.
• Manage inventory of food and non-food supplies, ensuring availability.
• Follow health and sanitation regulations and audits.
• Forecast annual food and labor costs and monitor finances.
• Foster client relationships to align programs with objectives.
