Job summary

Chartwells Higher Education is seeking an experienced Executive Chef I for catering at the University of Chicago. You will provide strategic and operational leadership for all culinary functions, overseeing staffing, menu development, and cost controls to support a high-volume off-premise catering program with over $3 million in annual revenue.

You will drive culinary excellence, budget management, and client satisfaction while partnering with stakeholders to deliver exceptional catering

Qualifications

• 5+ years of progressive culinary/kitchen management experience
• Experience in high-volume, complex foodservice operations
• Hands-on chef experience is required
• Strong knowledge of food trends, cost controls, and presentation
• Proficient with Microsoft Office applications

Responsibilities

• Plans regular and modified menus according to established guidelines
• Follows standardized recipes, portioning and presentation standards; maintains daily production worksheets and waste log sheets
• Trains kitchen staff in food preparation, safety, and equipment operation
• Establishes and maintains cleaning and maintenance schedules for equipment and work areas
• Maintains inventory of food and non-food supplies within guidelines; ensures availability
• Decides on utilization of leftover food within company guidelines
• Ensures compliance with health and sanitation regulations and audits
• Follows safety policies and participates in departmental meetings and programs
