Chartwells Higher Ed, part of Compass Group USA, seeks an Executive Chef to oversee kitchen operations in a high-volume on-campus dining environment, ensuring safety, quality and adherence to corporate programs.

The role requires culinary leadership, menu planning, staff training, food safety and cost controls, with a competitive salary and comprehensive benefits. Applications are accepted on an ongoing basis.

Qualifications

• A.S. or equivalent experience in culinary/kitchen management.
• 3–5 years progressively responsible culinary/kitchen management experience.
• Extensive catering experience is a plus.
• High-volume, complex foodservice operations experience desirable.
• Institutional and batch cooking experience.
• Hands-on chef experience is required.
• Knowledge of food trends, production, sanitation, and food-cost controls.
• Computers proficient, including Word, Excel, PowerPoint, Outlook and Internet.
• ServSafe certification is highly desirable.

Responsibilities

• Plans regular and modified menus according to guidelines.
• Follows recipes, portioning, presentation standards; uses production worksheets and waste logs; tastes meals for quality.
• Trains kitchen staff in food preparation, safe handling, and sanitation per standards.
• Establishes cleaning/maintenance schedules; ensures adherence by staff.
• Maintains inventory within guidelines to ensure product availability.
• Decides on leftover food utilization within guidelines.
• Complies with health and sanitation regulations and audits.
• Follows safety policies; participates in meetings and staff development.
