Job summary

The Skinny Pancake is seeking an experienced Director of Operations to lead restaurant performance, develop leaders and build a more scalable operation across Vermont, NY and MA. This strategic, hands-on role partners with the CEO and requires frequent restaurant visits to coach from the floor.

You will own performance metrics, develop GMs, drive operating discipline, and translate company priorities into execution while traveling between locations.

Qualifications

• 5+ years of progressive restaurant leadership experience.
• Experience as a General Manager and multi-unit leader.
• Strong understanding of P&Ls and unit economics.
• Track record of improving sales, labor, food cost and profitability.
• Proven ability to develop strong restaurant leaders.
• Strong judgment, communication and problem-solving skills.
• Comfort operating in an entrepreneurial, fast-moving environment.
• Willingness to travel regularly among restaurant locations.

Responsibilities

• Own overall restaurant performance, including sales, labor, food cost, profitability and guest experience.
• Coach and develop General Managers and field leaders.
• Build accountability and stronger operating discipline across locations.
• Review P&Ls and data to identify opportunities and drive corrective action.
• Improve consistency in service, food quality, staffing, safety and standards.
• Strengthen systems, SOPs and management practices as the company grows.
• Translate company strategy into clear restaurant-level execution and provide CEO with visibility.
