Job summary

The supervisor will manage menus, supply chains, staff scheduling, and ensure infection control and sanitation across kitchen areas, collaborating with the dietary consultant and maintenance team.

Responsibilities

• Support the facility's philosophy of care and strive to achieve its goals and objectives.
• Establish dietary policies and procedures with the dietary consultant and keep them current with regulations.
• Represent the dietary department with administration and other departments; communicate pertinent information to dietary staff.
• Supervise ordering of all food and kitchen supplies based on the menu and maintain adequate reserves.
• Supervise the receiving and storage of food and kitchen supplies and keep the storage area neat and orderly.
• Ensure the use of standardized recipes in food preparation.
• Inspect and supervise food preparation and service to meet sanitation standards.
• Assure proper maintenance of all food service equipment in conjunction with the maintenance director.
• Recruit and verify staff; schedule sufficient staff to ensure uninterrupted service.
• Provide regular in-services to dietary staff; check time records for payroll processing.
• Visit residents on admission for nutritional assessment and preferences; instruct residents and families on dietary needs.
• Maintain cycle menus and essential records; participate in care planning and quality meetings.
• Coordinate dietary services for facility events and implement plans from state and federal surveys.
