Position Summary
The Dietary Manager is a key leadership position responsible for the successful operation of Dining Services. The Dietary Manager actively prepares meals and manages the operations of the Dining Services Department, including staffing, food ordering and accountability, preparation, menu planning, food delivery, and sanitation in accordance with health department regulations. The Director ensures client and customer satisfaction with efficient, cost-effective management that meets and exceeds expectations. Assists in maintaining a positive physical and social environment for residents.
Essential Duties And Responsibilities
- Supervise, assign duties, and direct the work of all food service department employees with full accountability for dining services.
- Maintain equipment and work areas, ensure safety, sanitation, and infection control, promptly addressing noncompliance. Manage food costs within budget and maintain inventory control.
- Demonstrate independent judgment and discretion.
- Interview, recommend hiring, and orient new staff.
- Schedule staff, exercise discretion in creating schedules, and handle requests for time off or schedule modifications.
- Track attendance and implement disciplinary actions when necessary.
- Enforce policies and procedures, including safety, sanitation, and conduct rules; provide corrective and disciplinary actions as needed.
- Evaluate staff performance and recommend employment adjustments accordingly.
- Complete quarterly dietary QA audits.
- Plan community and individual resident menus in coordination with medical staff and residents' primary care providers. Organize special events as needed.
- Ensure meals are prepared according to menu and recipes, presented attractively, and meet nutritional standards. Provide snacks for residents with dietary needs. Supervise proper food storage, defrosting, and preparation procedures.
- Ensure excellent customer service for internal and external customers.
- Perform duties courteously and professionally, prioritizing resident safety and satisfaction.
- Greet visitors warmly, including residents' families, prospective residents, referral sources, vendors, and regulators.
- Answer phones professionally, adhering to community standards.
- Ensure compliance with regulations regarding residents’ rights.
- Ensure all employees attend required trainings and provide in-service sessions as needed.
- Attend training sessions as directed by the supervisor.
