Position summary
The Dietary Manager is a key leadership position responsible for the successful operation of Dining Services. This role involves preparing meals and managing the operations of the Dining Services Department, including staffing, food ordering, menu planning, food delivery, sanitation, and compliance with health regulations. The Director ensures client and customer satisfaction with efficient, cost-effective management, and assists in maintaining a positive environment for residents.
Essential Duties and Responsibilities
- Supervise, assign duties, and direct all food service department employees, maintaining full accountability for dining services.
- Ensure equipment maintenance and that work areas are clean, safe, and orderly. Adhere to infection control, food safety, chemical handling, fire safety, and sanitation procedures, addressing noncompliance promptly.
- Maintain food costs within budget and enforce inventory control.
- Use independent judgment and discretion in decision-making.
- Interview, recommend hiring, and orient new staff.
- Schedule staff, considering employee requests and operational needs, using independent judgment.
- Track attendance and implement disciplinary actions when necessary.
- Communicate and enforce policies regarding employee conduct, safety, sanitation, and HR policies, including disciplinary procedures.
- Evaluate employee performance and recommend employment adjustments as needed.
- Conduct dietary QA audits quarterly.
- Plan menus in coordination with healthcare providers and staff, including special events.
- Ensure meals are prepared according to recipes, presented attractively, and meet nutritional standards. Provide snacks for residents with dietary restrictions.
- Supervise proper storage, defrosting, and preparation of food following safety procedures.
- Ensure excellent customer service to residents, visitors, staff, and vendors.
- Perform duties courteously and professionally, prioritizing resident safety and satisfaction.
- Greet visitors and respond appropriately to phone inquiries.
- Ensure compliance with all regulations regarding residents' rights.
- Ensure staff attend required trainings and provide in-service training as needed.
- Attend training sessions as directed by supervisors.
