Job summary

Durham Marriott City Center, a Shaner Hotels property in the heart of downtown Durham, NC, seeks a skilled line cook to join its culinary team. Responsibilities include menu item development, cost-conscious kitchen management, and collaboration with the Executive Chef to meet budgets.

Qualifications

• Proven experience as a line cook or in a similar role.
• Strong attention to detail and creativity.
• High school diploma or equivalent; culinary and food safety certifications preferred.
• Solid knowledge of sanitation, food prep, baking techniques and nutrition.
• Excellent guest, management, and coworker communication skills.
• Ability to stand for long hours and perform repetitive motions.

Responsibilities

• Plan, prep, set up and provide quality service in all areas of food production for menu items and specials in the designated outlets in accordance with standards and plating guide specifications.
• Maintain organization, cleanliness and sanitation of work areas and equipment.
• Be available to work a flexible schedule, including weekends, holidays, and varied shifts.
• Create and design new and unique menu items.
• Assist the Executive Chef in establishing department budgets and adhering to budget guidelines.
• Ensure that all food and beverage products are consistently prepared and served according to hotel standards.
• Ensure all equipment is kept clean and in excellent working condition through personal inspection and preventative maintenance programs.
• Fully understand and comply with all regulations pertaining to health, safety, and labor requirements.
