Job summary

You will review logs, supervise prep and tray assembly, and train staff on Aramark recipes. Strong leadership and ability to work under strict standards are essential, with potential for varying duties by location.

Qualifications

• Must be 18 years or older.
• 1+ year food prep or related work preferred.
• Previous supervisory experience preferred.
• Experience interacting with inmates is a plus.
• Ability to motivate and supervise inmates and/or team members in a correctional setting.
• Must be able to obtain a food safety certification.
• Ability to work independently with limited supervision.
• Ability to exercise good judgment and tact.
• Must follow basic safety procedures and policies.
• Must qualify for and maintain correctional facility security clearance.

Responsibilities

• Adhere to and maintain preparation and production guidelines per Aramark standards by reviewing and approving production and temperature logs.
• Supervise inmates in food preparation and tray assembly.
• Ensure timely, efficient meal service and compliance with Aramark guidelines.
• Participate in preparation and serving of meals.
• Print and distribute recipes.
• Direct inmates in use of Aramark recipes and train on proper cooking procedures.
• Ensure proper portions and accommodate special dietary requirements.
• Obtain accurate daily population counts and review with staff.
• Adhere to security policies; ensure storage areas are locked.
• Return and secure all kitchen tools/equipment; secure keys.
• Determine work procedures, prepare schedules and sanitation schedules.
• Assist in inventory, proper receiving, and storing of food; requisition orders.
• Contribute to 5 P's in meal production and logistics.
• Follow Aramark SOP and HACCP policies for food handling.
