Job summary

US Bureau of Prisons/Federal Prison System is seeking a Cook Supervisor to independently prepare meats, seafood, vegetables, and sauces for regular and modified diet menus. You will plan, cook, and portion meals according to standardized recipes and coordinate the preparation of entire meals.

The role requires knowledge of cooking for large quantities and modified diets, and the selective factor includes an ANSI-certified Food Protection Manager certification.

Qualifications

• Prepare all types of meats, poultry, seafood, vegetables, fruits, sauces, and gravies for regular and modified diets.
• Cook and portion food for all meals following standardized recipes.
• Plan and coordinate the preparation of entire meals.
• Knowledge of preparing food for large quantities and modified diets (high protein, low cholesterol, low fat, calorie/sodium restricted).
• Selectively must possess a Food Protection Manager Certification from ANSI-accredited provider; upload proof during application.

Responsibilities

• Independently prepare all types of meats, poultry, seafood, vegetables, fruits, sauces, and gravies for regular and modified diet menus.
• Prepare, cook, season, and portion food for all meals by following standardized recipes.
• Plan and prepare or coordinate the preparation of entire meals.
• Make substitutions and adjustments in food preparation procedures and seasoning.
